Blue Fish opened in 2004 to bring seriously fresh sushi and sashimi to Montrose, and it never left. Owner Jay Choi's kitchen leans Japanese with a Pacific streak, and the sushi chefs behind the counter have turned out enough specialty rolls to fill a small book.
It's the kind of place where the salmon arrives with pickled onion, the miso earns its own following, and a warm afternoon means a table out on the Shopping Park sidewalk. Twenty years in, still a neighborhood room first.
